Mariske's Beetroot Brownies




500g beetroot
100g dark chocolate
100g soaked dates
50g walnuts
1 cup flour
1,5 tsp baking powder
1 tsp baking soda
3 tsp cocao
1 tsp honey
1 tsp vanilla essence
1 Tbs coconut oil
1 scoop Protein Fuel



Step 1

Top, tail and peel the beetroot.  Roughly chop and put into a large bowl. Add a splash of water, cover with cling film, then microwave on High for 12 mins or until tender.


Step 2

Heat oven to 180°C. While the beetroot cooks, butter then line a 20 x 30cm bake tray. Roughly chop the chocolate and Walnuts.  Tip the cooked beetroot into a sieve, drain off any excess liquid, then put into a food processor or blender with the chocolate, dates, and coconut oil. Whizz until the mix is as smooth as you can get it.


Step 3

Mix honey and the rest of the wet ingredients in  a large bowl.  Spoon the beetroot mix into the bowl. Sift in the left over dry ingredients and then throw in the walnuts.


Step 4

Pour into the prepared baking tray for 25 mins or until risen all over, with just the merest quiver under the center of the crust when you shake the pan. Cool completely in the tray, then cut into squares and enjoy!
